The New Nordic Diet

“So, like, what do you actually DO?” is a question I get asked a lot. The answer is actually, “not much.” I basically pick some variety of produce, talk to animals, eat, and then go to sleep, and occasionally shower.

However, I do try to read some, as well as better myself through higher education. I have been auditing online courses offered through Coursera.org. I highly recommend checking out their free courses if you have any interest.

One course I am taking is called the New Nordic Diet. This diet comes out of the realization that healthy diets are crucial to healthy individuals and societies. And comes with the acknowledgement that research “is needed improve the palatability of a healthy diet and make it attractive to the consumer.” Right up my alley, eh? My two loves! Scandinavia and eating.

But wait! It gets better! From the abstract: It has also been suggested that dietary recommendations should be tailored to regional conditions.

Those crazy Scandinavians are already on working how to eat healthy and how to minimize their environmental impact. Hot Damn! I have just started working on this four week course, and am very excited to hear what they have to say.

P.S. This blog is kind of a cop out, but its National Blog Posting Month, and because I have no idea what timezone my wordpress scheduler is in, I accidently posted twice yesterday. That threw a monkey at me, so I had to come up with something on the fly!

UPDATE: I still don’t know what time zone my WordPress Scheduler is in, and this post was public for precisely 15 minutes, and then taken down and reposted today. Why? Because three posts in a day is excessive. And that’s a lot of posting for this NaBloPoMo thing.
